CILANTRO LIME QUINOA

INGREDIENTS:
- 2 tablespoons extra virgin olive oil
- 3/4 cup yellow onion, minced
- 2 garlic cloves, minced
- 1 cup quinoa, rinsed
- 1 cup water
- 1 cup low-sodium free-range chicken broth
- 1/2 teaspoon onion powder
- 3 to 4 tablespoons fresh lime juice
- 1/3 cup organic cilantro, finely chopped
- salt and freshly ground black pepper to taste
DIRECTIONS:
- Heat oil in a large saucepan over medium-high heat.
- Add onions and saute 1 minute then add garlic and quinoa and saute 2 minutes longer.
- Pour in chicken broth, water, 1 tablespoon lime juice, and onion powder.
- Bring mixture to a boil, then reduce heat to low, cover and simmer 20 minutes. (Don't remove the lid)
- Remove from heat, fluff with a fork, stir in cilantro and remaining lime juice and salt and pepper to taste.
